Method
- Season pumpkin with salt, sugar, nutmeg and ground cinnamon
- Heat butter in a saucepan, add pumpkin, cinnamon sticks and cardamom

Potato Paratha – Cold and Moist Temperament
Method
- Measure flour, salt and cumin into a mixing bowl
- Rub in the oil until the mixture resembles breadcrumbs
- Add boiling water a little at a time and mix with a wooden spoon until a firm dough is formed
- Take care not to make the dough too hard
- Cover and set aside
Method (Potato Filling)
- Mash potatoes and add all the other ingredients
- Mix together thoroughly
Roti’s (parathas)
- Divide dough into small balls (to fit the palm of your hand)
- Roll out thinly to saucer size
- Place 1 ½ tbls of potato mixture in the centre and spread the mixture evenly
- Cover with a second paratha and seal sides evenly
- Grill on a hot, greased griddle until both sides are golden brown
- Serve with mint yoghurt (see recipe below)
Method (Mint Yoghurt Dip)
- Combine the yoghurt with finely crushed green chillies, chopped mint and chopped onion
- Season with salt, finely crushed dried coriander and pepper
- Serve alongside parathas

- Scoop out the flesh of the butternut and set aside
- Heat olive oil and simmer garlic for a minute making sure it doesn’t go brown
- Add butternut, carrots and baby marrows
- Season with salt, cayenne pepper, cumin, lemon pepper and sugar
- Cook for 10-15 minutes on medium heat until vegetables soften
- After 15 minutes, stir in milk and steam for a further five minutes
- Spoon mixture into shells and top with feta cheese and freshly ground black pepper
- Bake in a preheated oven at 180°C for 25 minutes, until cheese bubbles
- Garnish with chives and serve
